A vegetable salad for weight loss should have
low-calorie, high-volume ingredients like celery, cucumber, and tomatoes. These
ingredients are great because they fill you up without adding too many calories
to your plate. Mixed vegetable salad is a
refreshing salad using all different kinds of vegetables.
#1 Ingredients Simple Vegetable Salad Recipe
1 lb. green beans, trimmed
3 carrots, peeled and sliced
3 celery stalks, sliced
1 bell pepper, seeded and chopped
1 small zucchini, diced
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 cup peas
1/2 cup green beans
1/4 cup peas & 1/4 cup water
2 cups cabbage, shredded
1 small yellow onion, chopped
2 tomatoes, chopped
1/4 cup sliced olives
2 Tbsp. capers
1/4 cup sweet pickle relish
1/4 cup grape tomatoes, sliced
1/2 cup chopped green onions
Salt & pepper, to

Steam cauliflower, for 2 minutes or so.

Vegetable Salad Recipe
In a large pan, add
water, salt, and sugar and bring to a boil. Reduce the heat to medium-high. Add
cauliflower and cook, partially covered, until the water has evaporated and
cauliflower is tender. Remove from heat and set aside. While the cauliflower is
cooking, place the steamer on the back burner and set a pot of water on the
stovetop. Cook vegetables in the steamer until tender and cooked through about 8 minutes. Drain and set aside.
Once cauliflower is
cooked, drain it, rinse under cold water, then place in a food processor along
with veggies, zucchini, bell peppers, and celery. Pulse to chop. Add more salt
& pepper if desired.
Mix together the
cucumber vinaigrette ingredients and place them in a small bowl to blend. Season
with salt and pepper to taste.
Cut cauliflower into
small cubes and add them to the bowl with veggies and vinaigrette. Mix to
combine.
Place all veggies,
carrots, celery, and pepper in a large salad bowl.
In a small bowl, whisk
together the dressing ingredients and add to the salad. Toss to mix and season
to taste.
#2 Cucumber Vinaigrette
2 Tbsp. Dijon Mustard
1 Tbsp. Light Soy Sauce
1 Tbsp. Cold Water
1/2 tsp. Fresh Garlic (1
Tbsp. finely chopped)
1/2 tsp. Sugar
1/4 tsp. Salt
3/4 Cup Vinegar
2 Tbsp. Lemon Juice
3-4 Tbsp. Vinaigrette
Sauce
Mix together the
dressing ingredients. Adjust as needed with extra salt and pepper.
Serve with cucumber
vinaigrette. Toss with greens, radish, and other vegetables and top with more
dressing.
#3 Pearl Couscous Salad Topping
1/4 cup olive oil
2 cloves garlic, minced
2 red bell peppers,
seeded and diced
1 (8 ounces) package of spiral pasta, such as jumbo cavatappi
1 (1 pound) pkg. frozen
whole tomatoes
3/4 cup chicken stock
1 cup cashews, soaked in
warm water for 15 minutes, drained
1/4 cup olive oil
1 tsp. black pepper
1 (1/2 cup) shelled
edamame
1 (1/2 cup) red onion,
peeled and chopped
1 (1/2 cup) zucchini,
cut into 1/4-inch slices
1 (1/2 cup) yellow
onion, peeled and chopped
1 (1/2 cup) tomato,
seeded and chopped
4 Tbsp. shredded
Parmesan cheese
Salt and pepper to taste
How To Make Pearl Couscous Salad Topping?
Heat olive oil in a
large skillet over medium heat. Add garlic and cook, for about 30 seconds, until
fragrant. Stir in red bell peppers, and cook for 5 minutes, or until softened. Remove
from heat.
Cook pasta according to
package directions, and drain once cooked.
Meanwhile, cook the
frozen tomatoes, broth, cashews, edamame, and black pepper until about 10
minutes.
Spoon half the sauce
over pasta and divide the remaining sauce between 4 bowls.
Combine red onion,
zucchini, yellow onion, and tomato in a large bowl. Add the remaining
ingredients and toss to mix.
Pour pasta into a large
bowl and top with cauliflower and vegetables. Serve.
#4 Salad with Avocado Vinaigrette
1/2 cup olive oil
4 cloves garlic, minced
1 jalapeno, seeded and
minced
1/2 tsp. salt
3/4 cup white vinegar
2 cups apple cider
vinegar
3/4 cup water
1 cup fresh basil
leaves, rough chopped
4 green onions, white
and green parts, chopped
Juice of 1 lime
Combine ingredients in a
small bowl and whisk until well combined.
Pour over lettuce. Toss
well.
Toss the dressing in a small bowl to thin it out before drizzling over the salad.
Toss veggies with
dressing until evenly coated and add additional dressing if desired. Top with
the sliced olives and grape tomatoes. Top with green onion and chopped parsley.
Serve. Tossing is preferred to dressing.
